The role of the Apprentice Chef is to learn the basics of food preparation within a commercial kitchen to the values and standards of the hotel. Apprentice Chefs are required to study for NVQ Level qualifications.Duties of Apprentice Chef will involve:

  • Assist and support with day to day food preparation
  • Receive and prepare produce and ingredients to the required standard.
  • Assist in the preparation of finished dishes to the required standard.
  • Play your part in the good order and management of the kitchen.
  • Clean kitchen and equipment in accordance with Perkins Family Standards
  • Work within all current food safety regulations (as documented in FM sheets).
  • Monitor and report daily stock levels and receive deliveries.
  • Check all food deliveries for accuracy and quality.
  • Adhere to stock rotation standards.

As part of this apprenticeship you will work towards an industry wide recognised NVQ Level 2 in Professional Cookery. The training will be delivered in the form of work based learning and will include functional skills.From 1st October 2015, The National Minimum Wage (NMW) rate for apprentices is £3.40 per hour. This applies to 16-18 year old apprentices and those aged over 19 in the first year of their Apprenticeship. For all other apprentices the National Minimum Wage appropriate to their age applies. The Minimum Wage for Apprentices applies to time spent on the job plus time spent training.

As part of the kitchen team you will need real enthusiasm, energy and commitment in delivering the highest levels of culinary service. We are looking for someone who's got bags of stamina and enjoys the fast pace of working in a kitchen. You also need to be able to stay calm and work as part of a team during service.

The role of a Chef de Partie

  • Manage a section within the kitchen with the assistance of a Commis Chef.
  • Ensure that dishes are prepared and cooked according to the specific restaurant standards.
  • Managing the development and supervision of the Commis Chefs on the section, ensuring they are fully trained and understand their duties.
  • Ensure that stock is rotated and controlled within the specific section of the kitchen.
  • Ensure the cleaning schedule is adhered to and that cleaning tasks are delegated as appropriate.
  • Ensure full understanding of the functional administration of the restaurant.
  • Maintain a detailed Knowledge of the full menu and be able to explain dish descriptions.
  • Ensure compliance with legal requirements under the H&S act 1974 and Food Hygiene.
  • Ensure all policies, procedures, standards and guidelines are carefully adhered to.

The successful candidate will

  • Have previous experience in a Demi or Chef De Partie role, preferably within a formal or fine dining environment

  • To ensure a high degree of presence in the Reception, Lobby and Lounge areas

Some key duties of the Head Housekeeper

  • To be responsible for the cleanliness of all public areas, bedrooms and offices.
  • To ensure the smooth operation of the Linen Room around the hotel.
  • To manage the compilation of weekly wage sheets
  • To liaise on a regular basis with the Maintenance Department with regard to room maintenance.
  • To be responsible for the purchase of all cleaning materials and maintaining adequate stocks whilst controlling expenditure in line with company budget.
  • To be aware of, and responsible for all contract cleaning, including carpets, windows etc.
  • To maintain all Housekeeping storerooms in an orderly and tidy manner.

The role

We are searching for a passionate, knowledgeable Head Gardener who would enjoy working an exciting, fast-paced Hotel environment. The Head Gardener will take accountability of managing the team to maintain the hotel grounds including grass, borders, woodlands and parking areas to a high standard.

Some key duties of the Head Gardener

  • Accountability to manage the team to maintain the hotel grounds including grass, borders, woodlands and parking areas to a high standard
  • Ensure equipment is maintained in good & safe working order
  • Carry out short term ad hoc (reactive) duties and decorating work on a seasonal basis e.g. adhering to all safety procedures and causing minimum disruption to guests.
  • Cost repair/replace or improvement project requirements proactively
  • Respect guests’ privacy at all times.
  • To maintain personal hygiene and appearance standards at all times

Is this Head gardener role right for me?

The Head Gardener we’re looking for will have a genuine passion for leading a team to create a well maintained, beautiful gardens around the hotel. Most importantly though, you’ll have a keen desire and knowledgeable about what it takes as a Head Gardener with your previous experience in this area.

The role

We are searching for a professional, trustworthy Bars Manager who would enjoy working an exciting, fast-paced hotel environment. The Bars Manager will ensure that the bars team provide a warm welcome to guests within the hotel.

  • Assist guests in a friendly and courteous manner, demonstrating a good knowledge of the products on offer and taking every opportunity to upsell.
  • Take responsibility for the Bar float and ensure all cash control procedures are carried out.
  • Prepare bar areas for service in accordance with Company standards and procedures.
  • Serve guests with drinks and meals in accordance with Company and hotel standards and procedures and taking every opportunity to upsell.
  • Have knowledge of and operate hotel cash handling/accounting, security and emergency procedures.
  • Have knowledge of and operate Company and statutory Health & Safety procedures e.g. COSHH, Basic Food Hygiene.
  • Rotate bar stocks and maintain sales displays according to Company and hotel guidelines.
  • Have knowledge of and follow all prevailing liquor licensing laws.
  • Establish and maintain effective communication with other departments e.g. Kitchen Team, Restaurant Team, to ensure the highest standard of customer satisfaction.
  • Are friendly and courteous to guests at all times.
  • Deal with complaints/problems politely and positively and make every effort to resolve them. If you cannot resolve them, refer to your Line Manager, but, in any case, advise full details to your Line Manager at the first opportunity.
  • Clean bar areas after service in accordance with Company standards and procedures.
  • Maintain operational standards to the highest possible level in respect of service, hygiene, health and safety and ensure that there is minimal wastage.
